|THE PRODUCTION PROCESS
The harvest takes place from the end of October to the end of November, by hand directly from the trees. The olives are stored in open-sided boxes and,
within 24 hours of harvesting, are taken to be pressed.
THE EXTRACTION PROCESS
The oil is produced using a hammer press in a modern continuous cycle plant with controlled temperature.
As soon as it has been pressed the oil is stored in stainless steel containers and decanted at regular intervals.
The oil is bottled in a dedicated area in the estate’s cellars.
Erta di Quintole extra virgin olive oil is sold in bottles of dark glass in 0.100 ltr., 0.25 ltr. and 0.50 ltr. formats.
